Malai Kofta is one of the most popular Indian recipes made on special occasions. The koftas in a super rich gravy are everyone’s favorite. It’a a perfect recipe to be served in parties. Do try this recipe & share your inputs.
Ingredients for Kofte:
- 1 Medium Potato, boiled & garted
- 150 gms Paneer, grated
- Salt to taste
- ½ tsp Black Pepper Powder
- Pinch of cardamom powder
- ½ inch-Ginger, grated
- A pinch of Baking Soda
- 2 tbsp Corn Flour
- Finely chopped Coriander

- 2 tbsp Ghee
- 2 tbsp Oil
- 1 Bay leaf
- 2 Cardamom pods
- 6-8 Black Peppercorns
- ½ tbsp Cumin Seeds
- 1 medium Onion, sliced
- 1 tsp Coriander Powder
- 1 tbsp Red Chilli Powder
- ½ tsp Turmeric Powder
- 1 inch-Ginger, coarsely grounded
- 3-4 Garlic Cloves, coarsely grounded
- ½ cup Cashew nuts / Cashew paste
- 1 tsp Red Chilli Powder
Method
Koftas
– In a mixing bowl, grate potatoes, and paneer.
– Add salt, black pepper, cardamom powder, baking soda, grated ginger, and finely chopped corriander.
– Add refined flour for binding.
-Make small lemon sized balls.
– Deep fry the koftas and cook on low flame till golden brown in colour.
– Drain the koftas in an absorbent paper. Keep aside for further use.
Gravy
– In a pan, add ghee and oil.
– Add yogurt and mix well.
– Add red chilli powder, black pepper powder, fresh coriander, green chillies, and cook until oil separates (approx. 4-5 minutes).
– Add reserved stock, salt, and bring it to boil.
– Add soaked rice, mix and cook on medium high flame until water is reduced (4-5 minutes). Cover & steam cook on low flame for 15 minutes.
-Garnish with fried onion & serve!
